PROTEIN PANCAKES

Next time you get a hankering for ice cream or sweets try this guilt-free tasty snack or breakfast option that is delicious, healthy, high in protein and super easy to make!

Cooking and prep time: 4 mins. Makes three small pancakes.

INGREDIENTS

  • 2 tbs protein powder of your choice
  • 1 egg
  • Cinnamon
  • Handful of blueberries, strawberries or raspberries
  • ½ banana, sliced
  • Dash of water

METHOD

  • Whisk together protein powder and egg to make a paste.
  • Carefully add small amount of water, to obtain pancake-batter consistency. Add cinnamon to taste.
  • Cook pancake mixture one-third at a time on medium heat in a non-stick pan.
  • Transfer pancakes to plate. Top pancakes with berries and banana and sprinkle with extra cinnamon, to taste. Serve hot.

Blueberries (and most berries, for that matter) are high in nutrients, antioxidants and vitamins. They are particularly popular because of their reputation as a cancer-fighting superfood and also promote urinary and heart health and contain cholesterol-lowering properties.

CINNAMON:

Several studies have shown cinnamon to be a blood-sugar regulator – great for hypoglycemics and diabetics. Cinnamon is also used to lower LDL cholesterol levels and reduce arthritis-related pain.
