This high protein blueberry muffins is recipe is a great way to help increase your daily protein intake. They’re also a healthy snack that will fill you up, tastes great and is good for you. This recipe is designed to be gluten free using our Raw Protein Blend. If you would like a muffin with a smoother texture, try replacing the Rice Flour with Spelt flour, which is a great low gluten alternative.
- 1 Cup Water
- 1/8 Cup Chia Seeds
Soak Chia Seeds in water for 15 minutes, while prepping the other ingredients then whisk to break up any clumps.
- 1 Cup Food Fitness Lifestyle Raw Protein Powder
- 1 Cup Brown Rice Flour (use Spelt flour for more lift if you don’t mind a touch of gluten)
- 1 Cup Almond Meal
- 2 tbsp. Gluten Free Baking Powder
Mix all dry ingredients together in a large mixing bowl
- 1 ½ cups fruit (if using frozen blueberries thaw them out first)
- ¼ Cup Organic Agave or Honey
- 1 ¼ Cups Almond Milk (or lite milk)
- 1 tbsp. Organic Flax Oil
- 2 Eggs
Place all wet ingredient into large mixing bowl with the dry ingredients and combine until just mixed. *Do not over mix ingredients* Divide muffin mix into paper lined muffin tray, you should get 10 muffins. Bake on 180° for 25 minutes.
