BBQ SALMON SALAD

Try this scrumptious recipe packed with super foods and cancer fighting antioxidants guaranteed to fill you up and keep you fit!

Cooking and prep time: 20 mins, Makes 1 large salad

INGREDIENTS

  • 1 8-12oz salmon fillet
  • Mixed greens
  • Capsicum
  • Celery
  • Carrot
  • Ginger
  • Blueberries
  • Fetta
  • Lemon
  • Extra Virgin Olive Oil drizzle

SALMON PREP

  • Use a tin foil square about 30cm large enough to wrap and BBQ salmon in
  • Drizzle a small amount of Extra Virgin Olive Oil on tin foil square and place salmon fillet horizontally in middle of sheet
  • Season salmon with pepper and place lemon slice on top of fillet
  • Lift the top and bottom edges of tin foil and lightly fold and roll tin foil creating a little canapé for the salmon
  • BBQ for 8-12 mins depending on temperature of heat

SALAD PREP

  • Add mixed greens
  • Drizzle Extra Virgin Olive Oil on greens
  • Add chopped capsicum, carrots, celery, shredded ginger, blueberries and feta
